Tomato Sauce

Mama mia! Dis is one good sauce! Perfect for pasta, pizza or Ratatouille, no matter what your preference, this Tomato Sauce is sure to be an excellent compliment.

30 roma tomatoes

1 1/2 cups tomato paste
2 cups water
5 bay leaves

1/2 cup Buttery Spread
5 cloves garlic, minced
1 large red onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
8oz mushrooms, sliced

1/4 cup brown sugar
2 T dried oregano
1 T Italian seasoning
2 tsp white pepper


Place tomatoes in a large pot and fill with water making sure tomatoes are covered. Place pot on high heat and bring to a boil. Reduce heat to medium high and cook for 15 minutes.

Drain tomatoes into a colander and rinse with cold water. Remove skins and put tomatoes back into the pot. Using a potato masher, mash the tomatoes. Add tomato paste and 2 cups water, mix until well blended. Place on low heat, stir in bay leaves, cover and allow to simmer.

Melt Buttery Spread in a large skillet over medium heat. Add garlic and onions and sauté for 5 minutes. Stir in bell pepper and mushrooms and sauté for another 5 minutes.

Add the contents of the skillet into the tomato sauce. Stir in brown sugar, oregano, Italian seasoning, and white pepper. Continue to simmer over low heat for 5 hours.
