Rise and Shine Breakfast

Nothing starts the day right like a hearty breakfast. Paired with homemade toast and freshly squeezed orange juice the Rise and Shine Breakfast will have you eager to greet the morning. Tofu scrambles served aside a helping of golden home fries makes for a complete and satisfying meal.

Ingredients

HOME FRIES
4 red potatoes, cut into bite sized chunks
1/2 tsp sage
1/4 tsp salt
1/4 tsp pepper

2 T olive oil, + some for drizzle
4 leaves kale, destemmed and chopped
3 cloves garlic
1/2 red bell pepper, cleaned and diced

TOFU SCRAMBLES
1 T Buttery Spread
1/2 cup mushrooms, sliced
1/4 cup red onion, diced
1/2 green bell pepper, diced

1/2 brick Extra Firm Tofu
1/2 tsp Kala namak (black salt)
1/2 tsp turmeric
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika
1/4 tsp oregano
1/4 tsp cracked pepper






Directions

Place potatoes in a bowl and give a good rinse until the water runs clear. Fill bowl with water, making sure the potatoes are fully immersed. Allow to soak for 10 minutes, drain and dry both the bowl and the potatoes. Place potatoes back in bowl and drizzle with a bit of oil. Add sage, salt and pepper, toss well making sure the potatoes are evenly coated then set aside.

In a large fry pan, heat olive oil on medium high. When oil is hot, add potatoes and brown for 5 minutes, add the kale and continue to sauté for another 5 minutes, do not allow pan to dry out. Lower heat to medium, add garlic and red bell peppers, cover stirring occasionally until red peppers are tender.

Now crumble Tofu into a bowl, add Kala namak, turmeric, onion powder,garlic powder, oregano and cracked pepper. Gently toss all the ingredients together, making sure the Tofu is evenly coated then set aside.

In a medium sized fry pan melt Buttery Spread over medium heat. When hot, sauté mushrooms, onions and green bell pepper until they are tender.

Add Tofu crumbles to fry pan and toss together until combined, lower heat and sauté until Tofu is hot and the juices have cooked down.

Serve with homemade toast and fresh squeezed juice for a complete and satisfying start to any day!
