Red Black and Tofu Burger

Brimming with attitude and packed with flavor, this hearty burger is a healthy lean baked cuisine that just might be what the doctor ordered. The Red Black and Tofu Burger is an incredible blend of legumes, walnuts and tofu along with an array of seasonings making this burger not just good tasting but good for you too.

Prep Time: 25      Completion Time: 30      Serving Size: 8 patties


2 cans red kidney beans, drained
1 cup black walnut, pieces
1/2 block Extra Firm Tofu
1/2 cup red onion, chopped
1/4 cup nutritional yeast
1/4 cup flaxseed meal
1 sm bunch of spinach, finely chopped

2 T tapioca starch
2 T corn meal
1 T dried parsley
1 T dried cilantro
2 tsp olive oil
2 tsp smoked paprika
1 tsp coriander
1 tsp chili powder
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
4 cloves garlic, minced

1 T olive oil, for basting


Preheat oven 350 degrees F

In a large bowl combine, kidney beans, walnut pieces, Tofu, onion, nutritional yeast, flaxseed and spinach. Hand mash until well mixed but still chunky.

Add in the tapioca starch, corn meal, parsley, cilantro, olive oil, smoked paprika, coriander, chili powder, cumin, salt, pepper and minced garlic, one at a time, mixing in each ingredient well before adding the next.

Form into patties and place on a baking stone or lined cookie sheet. Brush with a bit of olive oil and
bake for 15min, turn, lightly brush again and bake for another 15min.
