Pineapple jam

I love pineapple and they are so good for you. Now this Pineapple Jam my not be the healthiest way to consume your pineapple, but it sure is tasty! Makes a sweet gift for any occasion, or keep it for yourself and share sparingly.

Prep Time: 10      Completion Time: 60      Serving Size: 2 cups

Ingredients

2 cups pineapple, diced
1 cup water

2 cups sugar
2 limes, juiced



Directions

In a large pot combine pineapple and water, cook on medium high until it comes to a boil. Reduce heat to medium and cook for an additional 25 minutes stirring occasionally with a flexible spatula.

Add the sugar and lime juice and continue cooking until mixture is thick and has a jam like consistency.

Let it cool, store in an air tight container and refrigerate.
