These light and fluffy pancakes are going to become a weekend regular. They are so easy to make and oh so scrumptious to eat. Topped with powdered sugar and maple syrup, these heavenly hot cakes are sinfully delicious!

1 1/4 cups all purpose flour
2 T granulated sugar
2 tsp baking powder
1/2 tsp salt

1 cup + 2 T water
1 T refined coconut oil


Combine the flour, sugar, baking powder, and salt into a large bowl. Whisk in the water and oil until a smooth batter is achieved.

Heat a lightly greased griddle over medium heat.

Using a small ladle, pour batter onto the hot griddle making small round circles the size of your fist. When bubbles form on top and the edges are dry, flip, and continue cooking until golden brown on both sides.

Repeat process, greasing griddle as needed, until all the batter is used.
