Kikkin Fried Chikkin (aka KFC)
Vegan KFC is here! Eureka's "Kikkin Fried Chikkin" is juicy, tender, crispy and full of flavor. And just like it's famous counter part, Eureka's vegan KFC doesn't have any real chicken in it!

6 Kikkin Chikkin Thighs
3/4 cup all purpose flour
3/4 cup rice flour
2 tsp onion powder
2 tsp garlic powder
2 tsp salt
2 tsp paprika
1+1/2 tsp ground black pepper
1 cup Soymilk
1 cup all purpose flour
2 tsp baking powder
1 tsp salt
1/4 tsp. ground thyme
1/2 cup oil for frying
In a large bowl, mix together the all purpose flour, rice flour, onion powder, garlic powder, salt, paprika and ground black pepper.
In another large bowl, whisk together the Soymilk, all purpose flour, baking powder, salt and ground thyme.
Now thoroughly coat the Kikkin Chikkin Thighs, one at a time, in the dry mixture. Then one at a time, dip each coated thigh into the batter. Allow any excess batter to drip off then place back into the dry mixture and thoroughly coat again. Place the coated/ batter dipped Kikkin Chikkin Thigh on a plate and repeat the process with the rest of the Kikkin Chikkin Thighs.
In a large deep skillet, heat the oil on medium until hot (oil will be watery looking, not thick).
Carefully place each of the coated/ batter dipped Kikkin Chikkin Thighs into the skillet and fry them, turning occasionally, until they are golden brown and crispy.
Remove the Kikkin Fried Chikkin from the skillet and place on paper towels to soak up the excess oil before serving.
