Kikkin Chikkin Thighs

Eureka's Kikkin Chikkin Thighs are as easy as 1-2-3 for you to make! You won't believe you eyes or your taste buds when you try these succulent tender morsels. Great in stews or for making our Chikkin Cacciatore. Any recipe that calls for chicken thighs can easily be veganized by using Eureka's Kikkin Chikkin Thighs.

8 French trumpet mushrooms
1 T Caribbean Jerk seasoning
2 T liquid smoke
3 T refined coconut oil

1 cup vital wheat gluten
1 T No Chicken Base
1 T poultry seasoning
1 tsp baking powder

3/4 cup water

6 sheets of rice paper

Buttery Spread for basting

Olive oil for pan frying


Preheat oven to 300 degrees F

In a bowl whisk together the Caribbean Jerk, liquid smoke and refined coconut oil. Set mixture aside and prepare the French Trumpet mushrooms.

Cut off the hard end tip of the stems, leaving the long tender trunk of the mushroom intact. Slice each trumpet mushroom in half, length wise and place on a baking stone or lined cookie sheet. Baste both sides of the mushroom slices with the Caribbean Jerk marinade and place in the oven to bake for 10 minutes, flip re-baste and continue to bake for another 10 minutes.

In a large bowl combine the vital wheat gluten, No Chicken Bouillon, poultry seasoning and baking powder. Set aside until the mushrooms are ready to be added.

Remove mushrooms from the oven.

Preheat oven to 450 degrees F

Using a couple of forks shred the mushrooms from top to bottom until it looks like a pile of BBQ. Add the shredded mushrooms to the bowl of vital wheat gluten to coat. Do not over work it. Add the water and now mix well and knead with the palm of your hands.

When completely combined form into a loaf and cut into 6 pieces.

place one sheet of rice paper on a clean surface and spray with water, turn it over and spray a with water again.

When rice paper is soft and pliable place one Kikkin Chikkin Thigh in the middle and wrap it up by folding the sides over one at a time.

The rice paper will be sticky and will adhere to itself very easily. this will help hold it together. Prevent the rice paper from building up and becoming too thick and gelatinous the bottom by trimming away the excess.

Baste the Kikkin Chikkin Thighs with Buttery Spread and place on a oven safe cooling rack, then place cooling rack on a baking stone. This will allow the heat to be evenly distributed around the Kikkin Chikkin Thighs without the need to flip.

Bake for 25 minutes, remove from the oven an pan fry, flipping occasionally, until both sides are golden brown and crispy.

You can use Kikkin Chikkin Thighs in a number of different recipes like Eureka's Chikkin Cacciatore served over spaghetti.

Store Kikkin Chikkin Thighs in an air tight container in the refrigerator or freeze them for use at a later time.
