Chikkin Cacciatore

This traditional Italian style chicken dish is super easy to make and brimming with flavor! You won't believe that this Chicken Cacciatore is vegan. Served over spaghetti and with a side of garlic bread, our vegan Chicken Cacciatore is sure to be a dinner time favorite.

1 T olive oil
4 Kikkin Chikkin Thighs
1 onion, diced chucky
2 green bell peppers, diced chunky

5 cloves garlic, minced
1 tsp thyme
1/2 tsp red chili pepper flakes

1/2 cup light vegetable broth

2- 14.5oz cans diced tomatoes
2 tsp italian seasoning
1/4 cup Kalamata olives, quartered

salt and pepper to taste


Heat the oil in a large deep fry pan over medium heat. When the oil is hot, add the Kikkin Chikkin Thighs, turning occasionally for 5 minutes. Add the onion and bell peppers and cook for another 5 minutes or until the onions and peppers are tender.

Add the garlic, thyme, red pepper flakes and sauté for 1 minute.

Add the broth and bring to a simmer, then add the tomatoes, Italian seasoning, Kalamata olives, salt and pepper to taste and bring back to a simmer. Reduce the heat and allow to continue simmering uncovered for 20 minutes.

Serve over spaghetti with a side of garlic bread.
