There is nothing quite as satisfying as homemade butter except for homemade vegan butter. This Buttery Spread recipe will have you melting for more. Add fresh garlic and chives for a savory spread that will compliment any canvas.

1 cup refined coconut oil, melted
⅓ cup olive oil
⅔ cup soymilk
8 tsp soy lecithin
1 tsp sugar
1 tsp salt
½ tsp lactic acid
½ tsp nutritional yeast flakes
½ tsp guar gum
Combine the coconut oil and olive oil in a cup or bowl and set aside.
Add the remaining ingredients to a blender and slowly pour in oil. Blend thoroughly until the mixture is smooth, thick and well combined.
Scrap into silicone molds, cover with parchment paper and freeze until hard and solid.
Remove from molds and store butter in the refrigerator in an air tight container.
Butter can also be stored in the freezer 3 months.
Use molds that hold a specific amount and can easily be divided. This makes measuring while cooking a breeze.
