Banana Coconut Bread

There is nothing quite as satisfying as a warm slice of banana bread. Chock full of banana's and walnuts, this banana bread recipe is not only delicious, it's moist and naturally sweet with yummy coconut too! Whether it's a quick slice for breakfast or served with a scoop of vanilla nice cream, this is one banana bread that is sure to please!

Ingredients

1 1/2 cups whole wheat flour
1/4 cup granulated sugar
1 tsp baking soda
1 tsp salt

2 egg substitutes
1/2 cup vanilla yogurt
1/4 cup unrefined coconut oil
1/2 tsp vanilla extract
3 ripe bananas

3/4 cup walnuts pieces
1/4 cup coconut, shreds





Directions

Preheat oven to 350 degrees F

Combine flour, sugar, baking soda, and salt in a large bowl.

In a blender add the egg substitute, yogurt, coconut oil, vanilla extract, and bananas. Mix until well blended.

Pour the blended mixture into the dry ingredients bowl. Mix until smooth, add walnuts and coconut shreds, continue to mix until everything is evenly distributed thru out the batter .

Grease an 8 x 4 loaf pan, pour in the batter and bake for 60 minutes.
