Homemade bagels, crisp, warm and freshly baked. You will never want to buy a store bought bagel again. They are fun and easy to prepare, quickly making them a household staple. Have fun creating your own tasty bagels, switch out raisins for cranberries or jalapeño with sundried tomatoes. The possibilities are endless!

1 1/4 cup warm water
4 1/2 tsp granulated sugar
2 tsp active yeast
3 1/2 cups all purpose flour
1 1/2 tsp salt
Olive oil for greasing
Preheat oven to 425 degrees F
Mix sugar into warm water until dissolved. Add yeast, mix well, then set aside and allow to proof.
In a large bowl mix together the flour and salt. (Note: this is also a good time to add in any special ingredients such as fresh jalapeño peppers, blueberries, raisins or seeds)
Once yeast has proofed, pour mixture into flour, cut in the liquid until well combined. Remove dough from bowl and kneed until it is soft and smooth. Now roll dough into a ball, place back in bowl and lightly grease. Cover with a clean kitchen towel and allow to rise for 1 hour.
Divide into 8 equal pieces and form into balls, poking your thumb thru each one creating a hole. Place on a cooling rack, cover and let rest for 10 minutes.
During this time, bring a large pot of water to a boil. Gently drop bagels into boiling water.
Boil each bagel for 45 seconds on each side. Carefully remove bagels from pot with a slotted ladle or spoon and place on baking stone.
Bake for 15 minutes.
Place covered dough on the warmest area of stove top while the oven is preheating. Allowing the dough to rise in a warm place will aid in producing a light and airy dough.
To add toppings, stop timer at 5 minutes, remove bagels from oven and working quickly, lightly brush or spray with water and sprinkle with salt, seeds, basically anything! Then quickly return to oven and continue to bake for the remaining 5 minutes.
